Meat Institute Submits Comments Regarding Final Rule Eliminating Trichinae Control Regulations and Associated Compliance Guideline

The Meat Institute submitted comments to the Food Safety and Inspection Service (FSIS) expressing support for the final rule rescinding requirements in the federal meat inspection regulations that prescribe treatments to destroy trichinae in both ready-to-eat (RTE) and not-ready-to-eat (NRTE) pork and pork products. The comments, however, state the associated compliance guideline is “unclear” and “troubling,” especially concerning FSIS’ expectations regarding prerequisite programs for fresh pork products. Instead, the Meat Institute contends FSIS should remove prerequisite program criteria from the guidance and replace it with a simple statement such as, “establishments must support the decision that trichinae is not reasonably likely to occur.” The comments urge FSIS to delay the final rule’s effective date until the guideline is revised.

FSIS will host a webinar July 17 at 11 a.m. ET to provide an overview about the final rule and detail ways establishments can address trichinae in their Hazard Analysis and Critical Control Point systems.
