Meat Institute Announces New Pork Book, Playing Cards

The Meat Institute and Urner Barry unveiled The Pork Book: Fundamentals of the Pork Trade from Farm to Table . The Pork Book, which complements the Beef Book and the Meat Buyer’s Guide®, covers fundamentals of the pork trade and includes detailed infographics and charts. The book examines pork packing, production, preparation, cuts, pricing and animal welfare. In addition, the book features chapter quizzes and key terms, and can be used for staff training and in culinary curriculums. The Pork Book costs $49 and is available for purchase here .

The Institute and Urner Barry also released the complementary Pork Book Playing Cards . The standard 52-card deck contains the most popular cuts of pork. Suits include loins, shoulder, bellies/ribs and ham.
