FDA Releases Revised Draft Guidance for Control of Listeria in RTE Foods

The Food and Drug Administration (FDA) announced the availability of a revised draft guidance for industry entitled "Control of Listeria monocytogenes in Ready-To-Eat (RTE) Foods." The revised draft guidance is intended to help establishments and individuals comply with the requirements in FDA's "Current Good Manufacturing Practice, Hazard Analysis and Risk-Based Preventive Controls for Human Food." Specifically, the guidance details ways establishments and individuals can significantly minimize or prevent contamination of RTE foods with Listeria monocytogenes whenever a RTE food is exposed to the environment prior to packaging and the packaged food does not receive a treatment or otherwise include a control measure that would reduce the risk of contamination. The guidance also has recommendations on sanitation controls to eliminate Listeria monocytogenes from the food production environment.
