AMI Foundation's Annual Listeria Control Workshop Details Best Practices for Food Safety

Arlington, VA – Meat and poultry industry management will learn best practices and intervention methods for preventing Listeria in the plant environment during the AMI Foundation's annual "Implementing Listeria Intervention and Control Workshop" scheduled for Nov. 3 - 4, 2004, at the Hyatt Regency O'Hare in Chicago, Ill.

The two-day workshop is designed to help manufacturers examine the issues surrounding Listeria control and testing and to provide guidance for the development of sanitation standards and procedures when processing ready-to-eat (RTE) meat and poultry products. Companies such as Cargill, Inc., Ecolab Inc., John Morrell & Co., Land O'Frost Inc. and Oscar Mayer Kraft Foods, will lead peer instruction and provide regulatory compliance updates.

The Food Safety and Inspection Service's (FSIS) interim rule for control of Listeria monocytogenes on RTE meat products took effect on Oct. 6, 2003. Speakers will discuss the rule's three, risk-based alternatives for categorizing RTE products and controlling Listeria.

The importance of Listeria control and industry's continuing efforts is evidenced by recent Centers for Disease Control and Prevention (CDC) data, which show that illnesses caused by Listeria monocytogenes have been sharply decreasing for the last decade and have nearly reached the U.S. Department of Health and Human Services' Healthy People 2010 public health goal.

Attendees will also have the opportunity to participate in small groups to discuss real life scenarios with workshop speakers and AMI regulatory and scientific affairs staff. Breakout sessions will follow allowing attendees to discuss different Listeria-related scenarios.
