FSIS Issues Notice on RTE Ingredient Safety.

The Food Safety and Inspection Service (FSIS) has issued Notice 31-13, providing inspection program personnel with instructions for verifying the safety of ingredients added to ready-to-eat (RTE) meat and poultry products. The notice follows several RTE meat and poultry product recalls associated with the addition of ingredients, spices, or sauce after the lethality step. The notice is designed to ensure that an establishment's food safety system addresses all potential food safety hazards associated with the production of their products, especially hazards from ingredients added to the product after the lethality step.
