FSIS Announces Availability of Microbial Risk Assessment Guideline

The Food Safety and Inspection Service, along with the Environmental Protection Agency, announced the availability of a guideline for conducting microbial risk assessment related to pathogenic microorganisms with focus on food and water. The microbial risk assessment guidance document is written for risk assessors to improve the quality and consistency of microbial risk assessments.

The guidelines address the risk assessment process from an introduction to terminology and roles of the participants to recommendations for planning the risk assessment to identifying hazards and responses.
