The October 2011 edition of American Meat Institute Foundation News, a quarterly update on research, education and information, is now available.
This issue contains articles on AMIF-funded research demonstrating the effectiveness of commonly used antimicrobials on both Escherichia coli O157:H7 and non-O157 shiga toxin-producing E. coli (nSTEC); mechanisms which cause Listeria to develop resistance; and the efficacy of quaternary ammonia and hydrogen peroxide powder in controlling Listeria monocytogenes in ready-to-eat meat and poultry processing facilities. The edition also includes a special food safety spotlight on using E. coli O157:H7 as an indicator organism for nSTEC, and an update on ongoing educational programming.
