AMI Asks FSIS for Clarification on Retained Water Regulation

In a letter to FSIS this week, AMI asked for further clarification regarding a rule regulating retained water in raw meat and poultry products. Specifically, the letter asked Deputy Administrator Phil Derfler to clarify for the red meat industry what practices and products are exempt from the regulation, what is meant by no retained water, and how unintentional noncompliance will be handled.
The rule, "Retained Water in Raw Meat and Poultry Products; Poultry Chilling Requirements," is set to take effect January 9, 2003. AMI encouraged the Agency to publish a directive instructing inspectors on compliance well before the planned implementation date to allow time for clarification in the field and the industry.
