In a letter to FSIS this week, AMI asked for further clarification regarding a rule regulating retained water in raw meat and poultry products. Specifically, the letter asked Deputy Administrator Phil Derfler to clarify for the red meat industry what practices and products are exempt from the regulation, what is meant by no retained water, and how unintentional noncompliance will be handled.

Requirements," is set to take effect January 9,
