Trichinella Final Rule Becomes Effective, FSIS Issues Directive for Inspection Personnel

The Food Safety and Inspection Service’s (FSIS) final rule eliminating regulatory requirements for the treatment of pork products to destroy trichinae, ending the Trichinella Approved Laboratory Program and consolidating regulations on thermally processed, commercially sterile meat and poultry products became effective July 30, 2018. FSIS also recently published a Compliance Guideline for the Prevention and Control of Trichinella and Other Parasitic Hazards in Pork Products . The guideline provides five options to prevent or control trichinae in pork products: validated testing; Animal and Plant Health Inspection Service approved validated pre-harvest program; labeling; treatment; and alternate control procedures.

FSIS last week issued a directive instructing inspection program personal about procedures to verify establishments properly address trichinae in their Hazard Analysis and Critical Control Point (HACCP) systems. The directive clarifies the available options that are effective for preventing and controlling Trichinella in ready-to-eat and not-ready-to-eat pork products and details requirements for certifying pork products for export under PQAPlus Programs. In addition, FSIS posted a Q&A document in conjunction with the directive to address commonly asked questions regarding the rule and guidance.
