Meat Institute and Beef Checkoff Host NYC Media Briefing

The Meat Institute, a contractor to the Beef Checkoff, last week hosted a briefing lunch for media at Michael’s Restaurant in New York City. The briefing featured a presentation by University of Wisconsin professor Jeff Sindelar, Ph.D., whose talk was titled “From Jerky to Pastrami: The Truth About Prepared Beef Products from a Meat Scientist.” Sindelar discussed how prepared products are made, the use of ingredients such as sodium nitrite and the role of prepared products in the diet. Attendees included dietitians, representatives from the Food Network and Eater as well as freelancers.
