FSIS Publishes Final Rule Eliminating Trichinae Control Regulations

The Food Safety and Inspection Service (FSIS) rescinded requirements in the federal meat inspection regulations that prescribe treatments to destroy trichinae in both ready-to-eat (RTE) and not-ready-to-eat (NRTE) pork and pork products. FSIS said the regulations are inconsistent with the Hazard Analysis and Critical Control Point regulations and are no longer necessary. FSIS also is ending its Trichinella Approved Laboratory Program for evaluating and approving non-federal laboratories that use the pooled sample digestion technique to analyze samples for the presence of trichinae. Furthermore, FSIS is consolidating the regulations regarding thermally processed, commercially sterile meat and poultry products.

In addition, FSIS will update the Export Library to add the specific time and temperature combinations for commercial cooking and freezing of pork for countries that require these times and temperatures. This update will ensure that establishments are aware of export requirements and prevent trade interruptions, according to FSIS.
