FSIS Issues Updated Instructions for Raw Pork Products Exploratory Sampling Project

The Food Safety and Inspection Service (FSIS) issued a notice updating instructions for the Raw Pork Products Exploratory Sampling project. The notice instructs inspection program personnel (IPP) at establishments that produce raw pork products to continue sampling pork products for Salmonella as part of the nationwide project and states FSIS laboratories will be used to administer the program moving forward, representing a shift from the current use of a contract laboratory. The notice also provides updated instructions to IPP for scheduling samples, requesting sampling supplies, sampling techniques and questions IPP are to answer in the Public Health Information System.
