FSIS Releases Updated Allergen Guide

The Food Safety and Inspection Service (FSIS) announced the availability of an updated version of its compliance guidelines for controlling hazards posed by allergens and other ingredients of public health concern. The guidelines provide recommendations for identifying hazards when conducting a hazard analysis and for preventing and controlling hazards through a Hazard Analysis and Critical Control Point (HACCP) plan, Sanitation Standard Operating Procedures (SOPs) or other prerequisite programs regarding these substances.
