FSIS to Begin Verifying Compliance with Validation Requirements at Large Establishments

The Food Safety and Inspection Service (FSIS) issued a notice reminding establishments that it will begin verifying compliance with validation requirements at large establishments on January 4, 2016, and at small and very small establishments starting April 4, 2016. FSIS issued a final version of the “Compliance Guideline for Hazard Analysis Critical Control Point (HACCP)” systems validation in May 2015. The guideline provided establishments eight to 11 months, depending on size, to gather initial in-plant validation data that may no longer be applicable to their systems. FSIS expects all establishments to have the necessary in-plant data from HACCP records. These documents generally include 90 calendar days of production records and any additional data gathered to demonstrate the establishment is able to effectively execute the critical operating parameters of their system. If large establishments have not yet gathered such data, they would need to begin doing so by October 6, 2015. FSIS will issue instructions to inspection program personnel, as well as to Enforcement, Investigation and Analysis Officers prior to beginning verification in January.
