FSIS Releases Compliance Guide Regarding Sanitary Dressing and Antimicrobial Implementation at Veal Slaughter Establishments

The Food Safety and Inspection Service (FSIS) issued a compliance guide to assist veal slaughter establishments in implementing effective sanitary dressing procedures and antimicrobial treatments. The guide also explains methods to properly assess microbial testing results, as FSIS officials observed that veal slaughter establishments were not properly evaluating testing results, including indicator organism results on carcasses and Shiga toxin-producing E. coli on beef manufacturing trimmings in ground veal. FSIS presents common sanitary dressing and antimicrobial intervention deficiencies identified at veal slaughter establishments, and discusses effective strategies and best practices to address these and other issues. The document also contains links to resources that provide more detail about process-control, sanitary dressing and antimicrobial procedures.
