FSIS Extends Nationwide Beef and Veal Carcass Baseline Data Collection Program

The Food Safety and Inspection Service (FSIS) extended by six months the Nationwide Beef and Veal Carcass Microbiological Baseline Data Collection Program. Data collection will continue through January 31, 2016, to ensure FSIS obtains the appropriate number of samples for the study. FSIS is testing the presence and levels of Shiga-toxin producing E. coli (STEC), Salmonella and certain indicator organisms during the beef slaughter process. The results will be used to develop compliance guidance that cattle and veal slaughter establishments should follow when assessing sanitary dressing procedures and slaughter controls. FSIS may use the baseline survey results to make changes to its sampling, testing and other verification activities.
