FSIS Issues Directive Revising Food Safety Assessment Methodology

USDA's Food Safety and Inspection Service (FSIS) issued a directive providing instructions to Enforcement, Investigations and Analysis Officers (EIAO) regarding ways to conduct Food Safety Assessments (FSA) using a new work methodology. Under the revised methodology, EIAOs are expected to complete most FSAs in five to seven production days after deriving results from a Public Health Risk Evaluation (PHRE). The directive also requires the completion of routine Listeria monocytogenes sampling prior to the start of an FSA and instructs EIAOs to assess an establishment's entire food safety system, as opposed to verifying whether individual regulatory requirements comply.
