USDA's Food Safety and Inspection Service (FSIS) released a brochure offering guidance on food defense plans in FSIS-regulated establishments. The brochure provides an overview of food defense, which FSIS defines as the protection of food products from intentional contamination or adulteration, and offers answers to frequently asked questions. The brochure also underscores the importance of establishing a functional food defense plan that is written, implemented, tested, reviewed and maintained. According to FSIS, food defense plans may help reduce the risks associated with unsafe products, minimize economic loss and lessen the need for additional regulation, among other benefits. USDA aims to increase the number of establishments with functional food defense plans from 84 percent to 90 percent by the end of 2015. Establishments may use the numerous FSIS tools and resources to learn more about developing food defense plans for their facilities.
