Registration Open for Processed Meat Technology School

The Department of Animal Science at Texas A&M University and the Texas A&M AgriLife Extension will host the 2015 Aggie Processed Meat Technology School, April 22-24, on the campus of Texas A&M in College Station, Texas. The school will discuss the steps involved in making processed meat products, including meat and ingredient selection and preparation, and will feature hands-on demonstrations and presentations from experts. Attendees will have the chance to practice preparing sausage, as well as cured and whole muscle, products. Experts will outline cooking, smoking and thermal processing techniques, and will describe ways to effectively evaluate finished processed meat products for quality and safety.
