Technomic Predicts 2015 Will See The Rise of Fat, Local

Technomic foodservice and menu concept expert Darren Tristano released the results of his poll of six leading menu experts who projected what they believe will be the hottest trends of 2015, and fat and local garnered the top two spots.

Tristano quoted one leading expert Kara Nielsen, who said, "Americans are recognizing that the fear of fat that we've lived under for so long is erroneous. And it's not just because of a foodie quest for flavor. It's also because of books like The Big Fat Surprise that are making the argument that natural fat is an essential part of a healthy diet."

Tristano also noted that local food will emerge as a major trend in 2015, with the greatest emphasis on local meat. "Get ready for more restaurants to celebrate the local origins of their chicken, beef, or pork just as zealously as their local Brandywine tomatoes or radicchio," he writes.
