(North American Meat Institute)

USDA's Food Safety and Inspection Service (FSIS) has revised the Microbiology Laboratory Guidebook, which contains current protocols for analytical tests required by FSIS regulatory activities on meat, poultry and egg products. The update includes the addition of a real-time polymerase chain reaction test for E. coli O157:H7 Shiga toxin gene detection, as well as a revision to the average turnaround time for Salmonella isolates, among other changes. A summary document provides a sample pathogen methods table and definitions of key terms. The changes take effect January 15, 2015.
