FSIS Updates Safe and Suitable Ingredients List

The USDA Food Safety and Inspection Service (FSIS) updated its Directive on Safe and Suitable Ingredients Used in the Production of Meat, Poultry and Egg Products . The update includes the addition of "an aqueous mixture of peroxyacetic acid, hydrogen peroxide, acetic acid,1- hydroxyethylidene-1, 1-diphosphonic acid (HEDP), water, and optionally sulfuric acid" as an antimicrobial as well as a revision of sodium hydroxide and/or potassium hydroxide for use as an acidifier and alkalizer.
