The North American Meat Association (NAMA) has released final versions of both The Meat Buyers Guide® and The Beef Book, Fundamentals of The Beef Trade From Ranch to Table.
The newly revised eighth edition of The Meat Buyers Guide® is the first universal meat-cut reference for the U.S., Canada and Mexico, covering beef, pork, lamb, veal and poultry. The new edition features 40 new meat cuts, 84 major specification revisions, processing options reflecting industry innovations, new item names and descriptions, more than 50 new photos, and a compact layout reducing the weight of the book by 22 percent, among other changes.
