NACMCF Releases Draft Subcommittee Reports

USDA's Food Safety and Inspection Service (FSIS) released draft subcommittee reports for today's National Advisory Committee on Microbiological Criteria for Foods (NACMCF) plenary session. The reports respond to questions from federal agencies regarding control strategies for reducing foodborne Norovirus infections and microbiological criteria as indicators of process control or insanitary conditions. The microbiological criteria subcommittee draft report outlines microbiological limits for numerous ready-to-eat (RTE) and non-RTE, ready-to-cook (RTC) meat and poultry products, including: intact and non-intact, raw non-RTE beef and pork; raw, non-RTE poultry; RTE cooked, perishable beef, pork, and poultry; and RTE fermented, dried beef, pork and poultry.
