(American Meat Institute)The Food Safety and Inspection Service (FSIS or the agency) has issued Questions and Answers regarding FSIS Directive 6100.4, Verification Instructions Related to Specified Risk Materials.  The Questions and Answers are meant to give additional clarification on the Directive.  The questions follow the same format as the Directive and are divided into chapters that correspond with those in the Directive.  Additional topics not in the Directive have also been included.  To view the Questions and Answers, please visit the FSIS website at: http://www.fsis.usda.gov/oppde/rdad/FSISDirectives/QA_6100.4.pdf.
The agency has also updated its list of new technologies for use in meat and poultry establishments.  FSIS maintains a chart on its website that gives a brief summary describing some of the new technologies that it has received and reviewed, and for which FSIS has "no objection" to use in establishments.  The chart has been updated and is available on the agency’s website at: http://www.fsis.usda.gov/regulations_&_policies/New_Technology_Table_Feb_06/index.asphttp://www.fsis.usda.gov/regulations_&_policies/New_Technology_Table_Feb_06/index.asp.
